    In fairness it looks like the gelatin around the strawberries melted. It was probably neat little squares like the reference pic when they were placed on top and then they melted either through temp or excess moisture coming from the berries, or both.

    used frozen strawberries instead of fresh and they leaked water everywhere as they thawed out.

    Tip for anyone else who wants a Minecraft cake: fruit roll ups. It was the easiest cake I ever decorated.

    The strawberries in the reference photo are probably set with gelatin because strawberries are such a wet fruit it will always bleed even if you use strawberry jelly.

    You would need to use gelatin to get it thick enough to hold a shape like a square without bleeding juice.

    It looks like it was set in gelatin and cut into squares then placed on the cake.

    The actual cake used strawberries in syrup. That probably tastes good but will never hold a shape.

    I’m willing to bet what happened here was they froze the strawberries using a small container or something to make the square shape, then just plopped it onto the cake not accounting for it thawing 😭

    Too many berries, not enough gelatin. If you look at the references there are big parts of the squares that are just plain gelatin, and the strawberries aren’t really sticking out. They must have placed sliced berries in a pan and covered with gelatin, and then cut squares. The ratio in the actual product would never be able to set well enough to cut shapes, and that amount of berries were always going to bleed juice

    I’d use agar – arrange the strawberry slices on a baking tray and cover with liquid agar. Let dry and then cut into squares and place on the cake.

    You’d want to tell them to do fresh strawberries covered in a glaze similar to a fruit tart.

    That or should have went to the folks who made the reference cake and paid what they charge. Unique stuff like this is something you want done by an expert not by someone winging it.

    Of course the other baker should have said we don’t know how to do that or discussed what you’d be looking for with those fruit parts… Looks like they used frozen berries or berries that had been cooked and that’s just not gonna work.

    Honestly they really tried. They made a tiny mistake which ruins the presentation but I don’t think the flavour would be impacted much.

    It’s a shame that forgetting to dry up or carmelize one ingredient can ruin what looks to be a great cake. Thats why I “”hate”” deserts. They’re not hard but a small misstep and all gone.
